Roasted Acorn Squash Recipe: 5 Ingredients & Super Simple!

Happy November! I don’t know about you, but I associate this time of year with all things squash. Try making this acorn squash if you’re looking for a super simple recipe to bring to potlucks, Thanksgiving, or even to enjoy at home with your family. 

Ingredients: 

  1. 2 small acorn squashes

  2. 2 tbsp olive oil

  3. 1 tbsp maple syrup

  4. Sea salt

  5. Cinnamon

Recipe: 

  1. Preheat the oven to 400°F.

  2. Cut off the base of the squash so that you can stand it up straight. Then cut the squash in half and scoop out the seeds. Cut each half into thirds. Repeat with the other squash. You should have 12 pieces from the two squashes.

  3. Place the pieces onto parchment paper in a large baking dish.

  4. Drizzle 2 tablespoons of olive oil and 1 tablespoon of maple syrup over the squash.

  5. Sprinkle each piece with sea salt and cinnamon.

  6. Use your hands to make sure each piece is nicely coated with all of the ingredients.

  7. Roast the squash for 1 hour at 400°F. Enjoy!
